Summer Vacation 2023 - Camp Fimfo in Waco, TX


So we got some of the extended family together for a "camping trip" to a resort style location in Waco, TX this summer. Some of the cousins were able to make it so it was fun to still have the kids along. They are all getting older now so its more difficult to get their schedules to allow for summer vacations anymore. We had Bethany, George, Colt, Addie, Allison, Haley and Jalen along with us. We spent a day, at the camp, and another day exploring Waco, while finishing up with a Butter My Biscuit breakfast before heading for home. See what a Waco adventure looks like below...

Day 1 - Exploring Camp Fimfo and Schmaltz in Waco TX

We spent our first day in Waco around the resort, with the kids going to the water park for most of the day. Camp Fimfo is pretty nice, with full amenities like a resort. They have small cabins for rent, swimming pools, water park, restaurant, short order grill, playgrounds. Plenty of family things to do which is great. Our cabin was nice, with a porch and full kitchen. Plenty of space for us to hang out and socialize. Ken brought the electric bikes as well so the girls made good use of those riding around the park. For lunch, we ventured into downtown Waco and found a sandwich shop known for their pastrami sandwiches - Schmaltz Sandwich Shoppe. It was pretty good. In the evening, we had dinner at the camp Fimfo restaurant and tried out their fixings - wasn't too bad. This is our first adventure with Jalen so we got to spend time with him which was nice. He's 6 months old and growing like a weed. It was a good day at Camp Fimfo - I'd recommend it for any family get away.


 

Day 2 - Waco TX - Magnolia Market and Bitty and Beau's

Day 2 we went exploring into Waco some more and visited the Magnolia Market, the location that Chip and Joanna Gaines have developed and based their home improvement show on. The location has what is known as the Magnolia silos, and several shops on the campus based on the Magnolia brand. They've made quite a business out of all of this. We ventured around some of the shops, and the sites there. They have a food truck court as well where you can get different kinds of food. We ended up trying some flavored sweet tea from one of the vendors. We then ventured over to Bitty and Beau's Coffee to have some refreshments. Haley has an affinity for this establishment which is based on providing jobs for challenged individuals - a very noble and worthy cause. The service was great, and the drinks were good as well. If I lived here, I would likely frequent this place over Starbucks. We went back to camp for a spell and then for dinner, we went back into Waco to Milo, for dinner. Interesting restaurant with a nice casual atmosphere and good food. We even got Allison and Addie to try some new foods :-) It was a nice way to end the day with everyone around the table.


 

Day 3 - Waco - Breakfast at Butter My Biscuit

Today was our last day in Waco, we packed up in the morning and checked out of Camp Fimfo, and headed into Waco for breakfast at a place call Butter My Biscuit Cafe. I believe they are know for biscuits? You think? Interestingly, there was a gaming establishment mixed in with the restaurant where gamers must meet and such. They had a bunch of Anemai figures, gaming paraphinelia, etc - it was a gamers paradise. As well, they had older game consoles and games available for sale - I even saw an Intellivision unit which is one from my younger days that I played for years. The restaurant had a lot of atmosphere with all the gaming stuff, and the food wasn't too bad. of course, we had to try the biscuits and they were good so the restaurant lived up to its name. Afterwards, we all split up and went our separate ways home - it was a good way to end the trip. Glad to spend time with all the family, can't beat that.
